
Salad:
•2 c. mixed greens
•1 Tbsp red onion, shaved
•1/2 Persian cucumber, sliced
•1/4 c. cherry tomatoes, halved
•3 kumquats, sliced
•1-2 dates, chopped
•4 oz. langostino, cooked
•1 Tbsp goat cheese, crumbled
•1 Tbsp mint, thinly sliced
Dressing:
•1 Tbsp olive oil
•juice of 1/4 orange
•1/2 Tbsp champagne vinegar
•1/2 tsp maple syrup
•1/2 tsp dijon
•Himalayan salt and pepper, to taste
*Combine in a jar and shake vigorously.
*Arrange salad ingredients on your plate and drizzle with vinaigrette. Enjoy!
