Pumpkin Spice Smoothie

Tis the season of pumpkin spice and everything nice! I love love love this time of year when the morning air changes and gets a little crisp. Nothing says Fall like pumpkin. Whether in lattes, smoothies, soups, oatmeal or pancakes, you just can't go wrong with this this low calorie, high fiber food. To top it off, it's packed with beta-carotene, vitamins, minerals and great for the eyes and skin.


I have created a delicious, nutritious and guiltless pumpkin smoothie to start getting you excited for Fall flavors! I will share a little pumpkin trick I discovered. One 16 oz can of Organic Pumpkin Puree will fit into one ice cube tray. You can freeze your pumpkin and then have ready to pop out and use at any time during the year. Perfect for when you are doing a single serving of something. Stay tuned as there will definitely be more pumpkin packed recipes to come!

Pumpkin Spice Smoothie (makes 16oz)

Ingredients:

· 1/2 cup coconut milk

· 1 cup almond milk

· 1 scoop vanilla plant-based protein powder (I like Sunwarrior)

· 1 tsp maca (optional)

· ½ cup pumpkin puree (I freeze mine into ice cubes)

· 1 banana, frozen

· 2 dates

· 1 tsp vanilla

· Cinnamon to taste

· Pumpkin Pie to taste


Directions:

1) Add all ingredients to a high-powered blender and blend until creamy.

2) Enjoy!
