Jenny Thompson is a self-trained plant-heavy chef, recipe developer, and food photographer. After struggling with disordered eating for over two decades and experiencing some severe health issues as a result, Jenny made the decision to turn her fearful relationship around with food and educate herself on proper nutrition and how to heal the body. She became certified as a Integrative Health & Wellness Coach, Holistic Nutritionist, and personal fitness trainer. She has since held nutrition education seminars for children and youth in her community, run a corporate juicing business, taught healthy cooking classes, and mentored others struggling with similar issues. Jenny has dedicated her life to "spreading the health" by sharing healthful whole food recipes, and showing others how food and healthy cooking can be a form of self love, self care, and enormous joy. The recipes in this book are what helped Jenny heal her body and relationship with food, and continue to provide optimal health and wellness in her everyday life to this day. The response to her recipes on social media channels and in her community was so positive, that after having many requests for a cookbook, she decided it was time.
When Jenny is not cooking up a storm in the kitchen or practicing food photography, she is spending time with her two kids Chase and Noah, going for beach walks, listening to audible, hiking, doing yoga, drinking artisanal coffee, and spending time with friends.
