Apple Pie Overnight Oats

With Fall creeping in, it's time to bring out all the comfort foods and cozy flavors. This quick breakfast can easily be made the night before for a nourishing grab n' go option the whole family will love!

Ingredrients:


For the Oats:

  • 1/2 c. old fashioned oats

  • 3/4 c. coconut milk (any kind of milk works)

  • 1 Tbsp almond butter

  • 1 Tbsp chia seeds

  • 1/2 tsp. cinnamon

  • 1/2 tsp vanilla

  • 1/2 Tbsp maple syrup

For the Apples:

  • 1 apple, cut in large chunks

  • 1/2 tsp cinnamon

  • 1/2 Tbsp maple syrup

  • pinch of himalayan salt

Directions:


1) Place all the ingredients for the apples in a small saucepan. Turn on heat to low, cover and cook for 10 minutes.

2) Combine all the ingredients for the oats in a bowl and stir well to combine.

3) In a 16oz mason jar, layer apples, oats, and then apples again.

4) Place in fridge to thicken and set overnight.

5) Enjoy!
