Heirloom Tomato Summer Bean Salad

Welcome to the weekend my friends! Sunshine and blue skies are shining bright here today. I thought I would post an easy, healthy, wholesome recipe that's perfect for summer bbq's or just a fast quick meal to have ready for your week! This one is SUPER versatile, you can add/swap your favorite veggies, flavors and beans to suite your liking. This dish can be served as a side or as a meal. I love adding it to a bed of arugula for a perfect light nutritious lunch.


Heirloom Tomato Summer Bean Salad (serves 4)


Ingredients:


· 1 can pinto beans, rinsed*

· 1 cup corn, cut off the cob*

· 1 bell pepper, any color but orange is great

· 1 cup heirloom cherry tomatoes, halved

· 1/4 green onions, sliced

· 1 cup cilantro, chopped

· 1 TBSP olive or avocado oil

· 2 limes, juiced

· Pink Himalayan Salt, to taste

· Chipotle Smoked Jalapeno Powder* (I use this one)

· Cayenne pepper, a few dashes

· Avocado*


Directions:


1) Combine all ingredients and let sit to let flavors combine at least 30 minutes. Serve with fresh avocado. Enjoy!!!


*Notes:


-You can easily swap out for any bean you fancy

-The smoked chipotle jalapeno powder really makes this dish! You can find it at Whole Foods or online here

-Feel free to use frozen or canned corn if you don’t fresh on hand

-Guacamole is equally good to avocado in this dish

-I often add a couple handfuls of arugula to this dish for a few extra greens and color
