Nourish Bowl with Tahini Citrus Dressing

There are times when I really crave a deeply nourishing meal, something with a heartiness to it, yet a not too heavy. These bowls top the charts when it comes to nutrient density; high in heart healthy fiber, antioxidants, vitamins, minerals, and protein. Creating a your own nourish bowl is actually quite easy if you have a handful of staple ingredients on hand. Most Sundays, I like to roast a couple sweet potatoes, beets, and steam some rice or quinoa. This way, when I get home after a busy day during the week with a laundry list of things to still do, two hungry kids and a mama, I'm all set! The combinations are endless, so feel free to sub and swap your favorite vegetables, grains, root vegetables and dressings for the ones that you prefer or have on hand. So do your sweet self a favor and whip out one of these delicious bowls and feel the cozy come on from the inside out!


Nourish Bowl with Tahini Citrus Dressing

(Makes 1 bowl)


Bowl Ingredients:

· ¾ cup Brown rice or quinoa, cooked

· 1 Roasted beet, cubed

· ½ Large sweet potato cubed

· 1 Persian cucumber, shaved

· 2 cups Arugula


Dressing Ingredients:

· 1 ½ Tbsp white miso paste

· 1 ½ Tbsp Tahini

· 1 Tbsp Apple cider vinegar

· 1 Orange, finely zested

· 3 Tbsp Orange juice

· ½ Tbsp Olive Oil

· 1 tsp Honey or maple syrup

· 1 tsp Tamari

· ½ Tbsp Freshly grated ginger


Directions:

1) In a large bowl or plate, lay down a bed of arugula. Then nicely assemble the rest of the bowl ingredients to your liking on top.

2) Whisk together all dressing ingredients and pour over your bowl.

3) Enjoy!
