Pumpkin Chia Seed Pudding

Here is a quick fun seasonal recipe that the whole family will enjoy! Chia seed pudding is fast to prepare and will keep you feeling full for hours. The best part? It feels like you're eating a decadent dessert, but this version is 100% guilt free and filled with healthy protein, fats and fiber. Enjoy!


Pumpkin Chia Seed Pudding (serves 2)

Ingredients:

•1 can coconut milk •2 Tbsp pumpkin purée •1/3 cup chia seeds •1 Tbsp maple syrup •1/2 tsp vanilla •1/2 tsp pumpkin pie spice •1/2 tsp cinnamon

Directions:

1) Combine all ingredients in a mason jar, Shake vigorously to combine. Let sit 10 minutes. Shake again and place in fridge to set overnight.

2) Top with your favorite fruit or enjoy on it's own.


*Notes:

-You can make a quick and easy coconut "whipped cream" by mixing coconut cream with a little vanilla and maple syrup (optional).
