Curried Chickpea Salad Wrap

Here's a delicious plant-based recipe for you that is quick to put together and easily adaptable in terms of the add-ins. A great fall options would be to swap out the peppers for crabberries or pomegranite seeds, and add in some crushed walnuts or pecans. Collard or cabbage leaves also make great "wraps" for this salad. Enjoy!

Curried Chickpea Salad Wrap


•14oz chickpeas

•3 Tbsp Vegenaise

•1 tsp dijon mustard

•1/2 Tbsp apple cider vinegar

•1 Tbsp curry powder

•1/4 cup red onion, finely diced

•1/2 cup celery, finely diced

•1 cup cilantro, chopped

•pink Himalayan salt, to taste

•fresh cracked pepper, to taste

•1/4 avocado, sliced

•2 romaine leaves

•1/4 cup bell pepper strips

•3 slices tomato

•Sunfood Organic Turmeric Coconut Wrap (or lettuce wrap, tortilla, etc)


Directions:


1) *Mash chickpeas with a fork and add the rest of the ingredients.

2) Place veggies in wrap and top with 1/3 of the chickpea salad mixture.

3) Enjoy!
