A fast easy soup that can be pulled together in 20 minutes or less. Perfect for busy week nights when you're feeling a little strapped on time. but want to make sure you can provide something wholesome on table. Enjoy!
Ingredients:
•1/2 T olive oil
•1/2 medium onion, chopped
•1 green bell or poblano pepper, chopped
•1 jalapeño pepper, chopped
***Sauté 5 minutes then add:
•One 28-oz cans fire roasted crushed tomatoes
•2 cups chicken broth
•1 tsp. cumin
•1/2 tsp. smoked chipotle powder
•Himalayan salt & pepper, to taste
•2 cooked rotisserie chicken breast’s, shredded
Directions:
1) Cook on med-low for another 10 minutes.
2) Pour into serving bowls and garnish with:
greek yogurt or sour cream
avocado
cilantro
tortilla chips
3) Enjoy!
